I love making holiday cookies and decorating them with my family. This recipe was my mother's cookies, but now with a gluten and dairy free twist. The secret is in the combination of nutmeg and almond flavoring in the icing. These are the BEST and ones that I love sharing.

Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Mix together flour, baking powder, nutmeg and salt and set aside.

Using a mixer, cream together dairy free butter, slowly add in the sugar. Once butter and sugar are creamed, add in egg whites and vanilla. Mix thoroughly.

Using mixer on stir/low speed - add flour mixture to the creamed butter mixture. Mix thoroughly. Once mixed, refrigerate dough for 20 - 30 minutes.

After 20 minutes, take cookie dough out of refrigerator.
Roll out sugar cookie dough on floured surface to 1/4 inch to 1/2 inch thickness. Using cookie cutters, cut out sugar cookies and place on parchment papered cookie sheet.
Bake 10 - 12 minutes at 400 degrees.

Easy Dairy Free Buttercream Frosting - Blend together with mixer the following ingredients:
2 1/2 cups powdered sugar, 2 1/2 tablespoons dairy free butter, 3 - 4 tablespoons dairy free milk, 1 teaspoon almond extract
Use food coloring to color icing in small bowls and decorate cooled cookies.

2 cups GF Flour Blend (used Bob's Red Mill 1-1)
3/4 teaspoon baking powder
1 teaspoon nutmeg
1/4 teaspoon salt
Dry Ingredients
2/3 cup Dairy Free Butter (used Country Crock)
1 cup cane sugar
2 large egg whites (or 1 whole large egg)
1 teaspoon vanilla
Cream Butter and Sugar
2 1/2 cups powdered sugar
3 - 4 teaspoons Non-Dairy Milk
2 1/2 tablespoons Dairy Free Butter
1 teaspoon almond extract
