BEST Classic Beef Chili and Cornbread That Are Gluten & Dairy Free

Happy Fall Y'all! I'm a huge fan of classic fall food and that includes chili and cornbread. Being an Indiana kid, chili and cornbread were staples in our house during the cooler months. This is my take on a classic beef chili that I truly hear is the BEST beef chili ever and it's gluten free. Plus, as any good midwesterner knows, cornbread is a must with chili. Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Dice onion, red and yellow pepper and set aside. Mince two cloves of garlic.

Over medium high heat, start browning ground beef, breaking into smaller pieces of meat. Add in onion, red and yellow peppers. Once beef is cooked and vegetables have softened, drain fat if there is substantial fat from beef. Otherwise, add in minced garlic cloves. Cook for 1-2 minutes.

Now add in the ancho chili powder, cumin, sweet paprika, oregano, salt and pepper to taste. Let these mix in so that a gravy somewhat forms at the bottom. Next add drained black beans and drained pinto beans. Add in can of 'Rotel' or similar mix and finally add in the can of tomato sauce. Stir.
Add in the beef broth and maple syrup. Lastly add in the Worcestershire sauce.

Continue to cook chili on low heat for an hour - serve and ready!

Instructions

1 large white onion

1 red pepper

2 cloves garlic

Dice vegetables

2 pounds lean ground beef

1 large white onion

1 yellow pepper

Brown Beef with Diced Vegetables

2 teaspoons cumin

2 teaspoons sweet paprika

3/4 teaspoon oregano

2 teaspoons salt

pepper to taste

2 teaspoons ancho chili powder

Add Dry Ingredients

1 can black beans

1 can pinto beans

1 Tablespoon maple syrup

1 can Rotel

15 ounce can tomato sauce

1 1/2 cups beef broth

2 Tablespoons Worcestershire sauce

Classic beef chili is a food that I associate with cool weather and football games. This beef chili recipe is full of delicious onions and peppers, along with two different types of beans. It's hearty, full of protein and a yummy beef chili that everyone in the family will enjoy.
